Scanning B&w Negatives And Editing

I'm new to the whole scanning film negatives and I want to know the step by step process to get the best quality from the scan. I have the scan settings down and such. I've heard that you should scan the negatives in color negatives or color instead of greyscale.

 

But my main concern is editing them in photoshop or Lightroom.

 

If anyone has a good workflow their are willing to show please help. Thanks

What kind of scanner are you sing? I just scan in greyscale, have done it in color as well and never seen a difference. I use the epson scanning software in pro mode, 3200dpi, and then an unsharp mask in PS and some curves and that's about it.
